One of the most important measures that companies must adopt to guarantee high safety levels of food products is the fight against parasites. Mice, cockroaches, coleopterans and other micro and macro parasites find favourable environments in food, where they can develop thus causing economic losses and damage. The new Regulations of the “Hygiene Package” have confirmed the importance of the parasite fight in order to achieve the alimentary safety objectives. In particular, the EC Regulation n. 852/2004 provides for obligations for companies, while the EC Regulation n. 854/2004 includes the fight against parasites within the procedures that a company must implement and which are subject to assessment by the appropriate authorities.
